Margie's Texas Pecan Factory Cinnamon Roasted Recipe...


I make it in 5 lb batches, so if she is going to make less ~ adjust
measurements accordingly. On a side note, always start with really good
pecans. I get mine from Texas Pecan Factory (on Satsuma Rd in Dallas -
South of Forest off Josey Lane).

5 lb pecans
5 egg whites
5 TBSP water
4 - 5 cups sugar
5 tsp Cinnamon
5 tsp Salt

In small bowl, stir sugar, cinnamon & salt together - set aside. Put egg
whites & water in large bowl, mix (elec mixer) until fluffy. Add pecans &
stir until coated evenly. Add sugar mixture and stir until all the dry
ingredients are soaked into the pecans.

Spread pecans in 2 large baking pans. Bake at 250 degrees for 1 - 1/2 hours
or until dry, stirring every 20 minutes. I usually rotate the pans in my
oven every time I stir (ones on the top rack go to the bottom rack & vice
versa).

When done, spread on newspaper to cool.

Ingredients

  • 1 egg white
  • 1 tablespoon water
  • 2 1/4 cups pecan halves
  • 1/2 cup white sugar
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon

Directions

  1. Preheat oven to 225 degrees F (105 degrees C). Lightly grease a rimmed baking pan.
  2. Combine the egg white and water in a mixing bowl; beat until fluffy. Fold in the pecans to coat evenly. Combine the sugar, salt, and ground cinnamon in a shaker or cup with a lid. Dust the pecans evenly with the sugar mixture. Spread the nuts over the prepared pan.
  3. Bake in preheated oven until toasted and fragrant, stirring every 15 minutes, about 1 hour. Cool on pan, and store in an airtight container.

  1. Thank you, thank you, thank you for this recipe! I made a couple of changes after reading the reviews; vanilla instead of water, 2 egg whites and 1/2 white sugar and 1/2 brown sugar. My father loves pecans and I served this at his 60th birthday party. So many people asked me for this recipe I lost count after a while. Absolutely delicious and addiciting!

    1 lb. pecans

    1 tbsp. cinnamon
    1 tsp. salt
    Preheat oven to 275 degrees. Beat egg white and water. Add pecans. Mix all other ingredients in a separate bowl. Then add pecans and dry mixture together. Spread on a cookie sheet and bake at 275 degrees for 45 minutes, turning pecans every 15 minutes.
