Brisket Practice continues... week four 081609



12hr & 15 minute cook.
tried to keep temp at 275 for the entire cook.
went on at 10 AM. took 30 minutes to get up to 275 temp.
6:45 pm, brisket temps were @170. briskets wrapped 8 3/4 hours in.
pulled of @ 10:15 pm./ in coolers for 45 minutes.
pecan & hickory/ harley's seasoning & DBS.
this practice has been great.
have came a long way in a short period of time.
